Smultringer (Doughnuts)
2 eggs | 1 cup sugar |
1 cup sour cream | 1 tsp. baking sodaa |
1/2 tsp. ground cardamom or nutmeg | 1/2 tsp. salt |
Flour |
Beat eggs well, add sugar, cream & baking soda, cardamom or nutmeg, salt & just enough flour to make a dough which can be rolled. If thin cream or sour milk is used, add 2 Tbsp. melted butter. Chill dough, roll & cut out with doughnut cutter. Cook in hot lard or oil, turning as soon as they reach surface. Drain on paper towels or any absorbent paper.
Makes about 30 doughnuts
Fleskepannekaker (Bacon Pancakes)
6 eggs | Salt |
Flour | 1/2 cup milk |
1/2 cup sour cream | 1 Tbsp. chopped chives or 2 Tbsp. sugar |
Bacon |
Beat eggs with a little salt & enough flour to make a medium dough, add milk & cream & chopped chives & mix well. Fry a few slices of bacon on one side, turn & add about 4 Tbsp. batter, being careful when turning the second time. Fry until lightly browned on both sides.
Makes 4 or more servings
